Roasted Leg of Lamb (M’hammar Style)

Ingredients
 1 kg Leg of lamb, cut into large pieces
 4 Onions, finely diced
 1 tsp Smen (fermented butter)
 4 tbsp Olive oil
 ½ tsp Ground turmeric
 ½ tsp Black pepper
 1 tsp Salt
 2 tsp Paprika
 2 tsp Ground ginger
 2 tsp Dried cilantro
 Pinch of saffron threads
 140 ml (1/2 cup) Water
For Garnish
 Fried almonds
 Boiled eggs, halved
Prepare the Marinade

In a large bowl, mix the spices, smen, and water to create a paste.

Marinate the Lamb

Add the lamb and coat thoroughly with the spice mixture. Cover the bowl with plastic wrap and let it marinate for 30 minutes.

Cook the Onions and Lamb

Heat a pot over medium heat. Add the diced onions, then place the lamb on top. Drizzle olive oil around the edges of the pot, stirring occasionally for 10 minutes.

Simmer and Garnish

Pour in enough water to cover two-thirds of the lamb. Cover the pot and cook for about an hour or until the lamb is tender, adding more water if necessary. Once done, transfer the lamb to a serving dish, garnish with fried almonds and boiled eggs, and enjoy!
