Sweet Couscous Delight with Fruits
Ingredients for the Couscous
 500 g (1 lb) Couscous
 4 tbsp Vegetable oil (divided)
 100 g (3.5 oz) Butter, cubed
 100 g (3.5 oz) Toasted walnuts, finely ground
 100 g (3.5 oz) Date paste
 150 ml (1/2 cup) Water (divided)
 Salt to taste
Decoration of Couscous with Jben Cheese and Fresh Fruits
 200 g (1 cup) Jben Cheese (Moroccan fresh cheese)
 4 Strawberries, finely diced
 2 Kiwis, finely diced
 1 Apple, finely diced
 2 tbsp Honey
 Fresh mint leaves for garnish
Preparing the Couscous

  1. In a large bowl, mix couscous, salt, 3 tablespoons of vegetable oil, and 80ml (1/3 cup) of water until the couscous is coated.
  2. Steam the couscous in a couscoussier for 20 minutes.
  3. Transfer the couscous back to the bowl, add 30ml (2 tablespoons) of water, mix well, and steam again for 20 minutes.
  4. Remove the couscous from the steamer, add the butter, and stir until melted.
  5. Mix in the date paste until fully combined with the couscous.
  6. Stir in the ground walnuts and 1 tablespoon of oil, then steam for a final 15 minutes.

  1. Place a generous spoonful of couscous into your serving cups.
  2. Add a layer of chopped fruits, followed by a tablespoon of jben cheese, and drizzle with honey.
  3. Cover with another layer of couscous.
  4. Decorate with mint leaves and serve.
