Ingredients for the Couscous
500 g (1 lb) Couscous
4 tbsp Vegetable oil (divided)
100 g (3.5 oz) Butter, cubed
100 g (3.5 oz) Toasted walnuts, finely ground
100 g (3.5 oz) Date paste
150 ml (1/2 cup) Water (divided)
Salt to taste
Decoration of Couscous with Jben Cheese and Fresh Fruits
200 g (1 cup) Jben Cheese (Moroccan fresh cheese)
4 Strawberries, finely diced
2 Kiwis, finely diced
1 Apple, finely diced
2 tbsp Honey
Fresh mint leaves for garnish
Preparing the Couscous

- In a large bowl, mix couscous, salt, 3 tablespoons of vegetable oil, and 80ml (1/3 cup) of water until the couscous is coated.
- Steam the couscous in a couscoussier for 20 minutes.
- Transfer the couscous back to the bowl, add 30ml (2 tablespoons) of water, mix well, and steam again for 20 minutes.
- Remove the couscous from the steamer, add the butter, and stir until melted.
- Mix in the date paste until fully combined with the couscous.
- Stir in the ground walnuts and 1 tablespoon of oil, then steam for a final 15 minutes.
Decorating the Couscous

- Place a generous spoonful of couscous into your serving cups.
- Add a layer of chopped fruits, followed by a tablespoon of jben cheese, and drizzle with honey.
- Cover with another layer of couscous.
- Decorate with mint leaves and serve.
