For the Kefta
250 g (1/2 pound) Ground lamb
1 Small onion, finely diced
1 Clove garlic, crushed
1 tbsp Chopped coriander and parsley
1 tsp Salt
1 tsp Spice mix
2 tbsp Vegetable oil
For the Kefta Spice Mix
1 tbsp Paprika
1 tbsp Ground cinnamon
1 tbsp Cumin
1 tbsp Ginger
2 tbsp Ground coriander
1 tsp Chili powder
1 tsp Grated nutmeg
1 tsp Cardamom
¼ tsp Ground galangal (Thai ginger)
¼ tsp Ground dried rose petals
Preparing the Spice Mix

- Place all the spices in a jar and shake well to combine.
Preparing the Meat (Kefta) Fingers

- In a bowl, add the ground lamb, onion, garlic, coriander, parsley, and the prepared spice mix.
- Mix everything by hand until the ingredients are fully combined, then shape the mixture into 8cm long kefta fingers.
- Heat the vegetable oil in a grill pan over medium heat and cook the kefta fingers for 3 minutes on each side.
- Serve immediately and enjoy!
