For the Kefta
 250 g (1/2 pound) Ground lamb
 1 Small onion, finely diced
 1 Clove garlic, crushed
 1 tbsp Chopped coriander and parsley
 1 tsp Salt
 1 tsp Spice mix
 2 tbsp Vegetable oil
For the Kefta Spice Mix
 1 tbsp Paprika
 1 tbsp Ground cinnamon
 1 tbsp Cumin
 1 tbsp Ginger
 2 tbsp Ground coriander
 1 tsp Chili powder
 1 tsp Grated nutmeg
 1 tsp Cardamom
 ¼ tsp Ground galangal (Thai ginger)
 ¼ tsp Ground dried rose petals
Preparing the Spice Mix

  1. Place all the spices in a jar and shake well to combine.

Preparing the Meat (Kefta) Fingers

  1. In a bowl, add the ground lamb, onion, garlic, coriander, parsley, and the prepared spice mix.
  2. Mix everything by hand until the ingredients are fully combined, then shape the mixture into 8cm long kefta fingers.
  3. Heat the vegetable oil in a grill pan over medium heat and cook the kefta fingers for 3 minutes on each side.
  4. Serve immediately and enjoy!
