Ingredients For the Lamb Head
 1 Lamb head
 1 tbsp Vegetable oil
 ½ tsp Ground cumin
 ½ tsp Ground coriander
 ½ tsp Salt
 1 Tomato, sliced
 Water, as needed
For Serving
 Chili pepper, to taste
 Ground cumin, to taste
 Salt, to taste
Prepare the Spice Mixture

  • In a small bowl, mix the vegetable oil with 1/2 teaspoon each of cumin, coriander, and salt. Stir until combined.

Season the Lamb Head

  • Brush the lamb head generously with the spice mixture, ensuring it is evenly coated. Set aside.

Prepare the Steamer

  • Fill the base of a steamer or couscous pot with water and add the sliced tomato. This prevents the pot from staining.

 

Steam the Lamb Head

  • Place the lamb head, tongue facing down, in the steamer's top section to maintain the skin's shape. Cover with a layer of parchment paper, then foil. Steam for 1 hour and 30 minutes.
