Moroccan Fava Bean Purée Soup (Bissara)

Ingredients
 125 g (4.4 oz) Dried green peas
 125 g (4.4 oz) Dried fava beans
 1 l (4 cups) Water
 3 Garlic cloves, minced
 1 tsp Salt
 1 tsp Ground cumin
 1 tsp Chili powder
 1 tbsp Olive oil
Prepare the Ingredients

In a large pot over medium-high heat, combine the dried green peas, dried fava beans, minced garlic, water, and 2 tablespoons of olive oil.

Once the water begins to boil, skim off the foam that forms on the surface.

Skim the Foam

Lower the heat to medium and cook for about 45 minutes, until the peas and beans are soft and start to form a paste. Check the water level during cooking and add more if needed until fully cooked.

Turn off the heat and blend the mixture using a hand mixer until smooth and creamy. Add more water to achieve your desired consistency.

Blend the Soup

Stir in the cumin, chili powder, and the remaining 3 tablespoons of olive oil. Simmer over medium heat for 5 minutes.

Season the Soup

Serve hot with bread and extra olive oil on the side.
