I recently made Moroccan harira soup for the first time, but it turned out way too thick. What could I have done wrong, and how can I adjust the consistency without losing flavor?

Harira tends to thicken naturally due to the lentils, chickpeas, and flour. To fix it, just add more water or broth gradually while the soup is cooking until you get the desired consistency. If you don’t want to dilute the flavor, using vegetable or chicken stock is a great option!

Yes, adding more liquid should help. Another thing you can do is to adjust the amount of flour or tomato paste next time. Less flour will prevent the soup from thickening too much. I also like to stir the soup frequently as it cooks to avoid it getting too thick at the bottom.

I’ve had this issue before! One trick is to reserve some broth separately while cooking and then add it back at the end if the soup thickens too much. Also, if you plan on reheating it later, remember it will thicken more as it cools, so leave it a bit thinner while cooking.
