Whenever I make a tagine, the sauce often dries up before the dish is fully cooked. How can I prevent this?

Keep the lid on tight to trap the steam and moisture. You can also add a little water or broth halfway through cooking to keep the sauce from drying out.

Make sure to cook on low heat and don’t lift the lid too often. Adding more liquid, like water or stock, can help maintain moisture during the cooking process.

Using a low and slow cooking method helps preserve moisture. If the sauce starts to dry out, add a small amount of broth or water, and keep the lid closed to trap steam.
