How do I prevent my preserved lemons from turning mushy?
0
I’ve been making preserved lemons, but after a few weeks, they sometimes become too soft. Any advice on avoiding this?

Ensure you’re using enough salt to draw out moisture and preserve the lemons’ texture.

Store the jar in a cool, dark place, and check periodically to make sure the lemons are fully submerged in their brine.

Avoid over-packing the jar. The lemons need space for the brine to circulate and work its magic.

Use firm, unwaxed lemons and avoid overripe ones. They hold up better during the preservation process.
