I’ve tried making Moroccan couscous a few times, but it often ends up too dense or clumpy. I’m looking for tips on how to make it light and fluffy, just like in traditional Moroccan homes. Any advice on the steaming method or seasoning would be greatly appreciated!

The key to fluffy couscous is to steam it multiple times. After rinsing, let the couscous absorb water for 15 minutes. Fluff it, steam for 15-20 minutes, and repeat this process two or three times. After the final steaming, drizzle with olive oil or butter and fluff again. This will give you that perfect, light texture!

I agree, steaming is essential! Another tip is to always use a couscousiere (a traditional steamer), as it evenly cooks the couscous. If you don’t have one, a fine mesh sieve over a pot works too. Also, adding a bit of olive oil before steaming helps prevent clumping!
