How do I avoid overcooking couscous?

Every time I make couscous, it ends up mushy and overcooked. Any tips for cooking it perfectly?

The trick to perfect couscous is to steam it gently. Once you’ve added boiling water or broth, cover it and let it sit off the heat for about 5 minutes, then fluff it with a fork. Avoid stirring too much to keep the grains separate.
