How can I prevent Moroccan meatballs (kefta) from drying out when cooking?
0
Whenever I make kefta, they tend to get dry. I’d love any tips on keeping them moist and flavorful.

Try adding grated onion to the meat mixture. The moisture from the onion keeps the kefta juicy while adding extra flavor.

You can also add a bit of breadcrumbs soaked in milk. This keeps them moist and tender when cooking.

Don’t overcook them, as that will dry them out. If you’re cooking in a sauce, simmer gently rather than boiling.

A touch of olive oil mixed into the meat also helps retain moisture, especially when grilling.
