I’ve tried making khobz a few times, but it’s always a bit too dense. Does anyone have tips on getting a lighter, fluffier bread?

One trick is to knead the dough longer and let it rise twice. After the first rise, punch it down, shape, and let it rise again before baking.

Using a mix of all-purpose flour and semolina can help create a softer texture. Semolina adds a slight fluffiness without making the bread too dense.

Try adding a bit more yeast and a little bit of sugar to give it a better rise. Also, make sure your water is warm but not too hot, or it will kill the yeast.

A great tip is to bake it at a high temperature for the first 10 minutes, then lower the heat. It helps the bread puff up nicely.
