How can I make Moroccan bread (khobz) lighter and fluffier?

I’ve tried making khobz a few times, but it’s always a bit too dense. Does anyone have tips on getting a lighter, fluffier bread?

One trick is to knead the dough longer and let it rise twice. After the first rise, punch it down, shape, and let it rise again before baking.

Try adding a bit more yeast and a little bit of sugar to give it a better rise. Also, make sure your water is warm but not too hot, or it will kill the yeast.
