I’d love to try making a traditional Moroccan lamb tagine, but I only have chicken on hand. Will the flavor and texture still be good if I substitute chicken for lamb? Are there any changes I should make to the cooking process?

Yes, chicken is a great substitute! The flavors will be milder than lamb, but still delicious. Just reduce the cooking time since chicken cooks faster — about 45 minutes to 1 hour should be enough. I suggest using bone-in chicken thighs or drumsticks for the best flavor and tenderness.

I agree! If you want to mimic the richness of lamb, you can add a little extra olive oil or a spoonful of ghee to enhance the flavor. Also, spices like cinnamon, turmeric, and cumin work just as well with chicken. Don’t forget to use preserved lemons and olives for that authentic tagine taste!

I’ve made tagine with chicken many times, and I recommend marinating the chicken in the spices for at least 30 minutes before cooking. This will help the chicken absorb all the wonderful flavors, making up for the shorter cooking time compared to lamb. It turns out great every time!
