I’m looking for a recipe for traditional Moroccan couscous but without any meat. I’ve seen plenty of meat-based versions, but I’d love a vegetarian or vegan take on this classic dish. Any tips or recipes that still bring out authentic flavors?

You can easily make Moroccan couscous without meat by using vegetable broth instead of meat stock. Just load it up with seasonal veggies like carrots, zucchini, potatoes, and pumpkin. Adding some chickpeas or lentils will give it a hearty texture, and for spices, stick with saffron, cumin, and a bit of cinnamon to maintain that traditional taste.

I recommend adding a mix of roasted root vegetables like sweet potatoes and parsnips for a rich flavor. To enhance the traditional taste, serve it with a sauce made from onions, raisins, and cinnamon. This sweet and savory combo gives vegetarian couscous a beautiful Moroccan touch.
