I'm really excited to try making Moroccan pastilla, but I want to use chicken instead of pigeon. Will that work, and do I need to adjust the recipe in any way?

Yes, chicken works great as a substitute! You can follow the same steps as for pigeon. Just season the chicken with saffron, cinnamon, and other spices. Simmer it until tender, then shred the meat and use it for the filling.

I’ve made chicken pastilla before, and the key is to slow-cook the chicken with onions and spices. After it’s cooked, shred the meat and mix with toasted almonds. The rest of the process is the same as the traditional recipe.

Chicken is a great alternative! Just make sure to use enough broth and spices to keep the filling moist. You can also marinate the chicken overnight for deeper flavor.
