I love the traditional Moroccan harira soup, but I’m vegetarian. How can I make a flavorful vegetarian version without losing its authentic taste?

You can substitute the meat with chickpeas and lentils. The spices like cumin, cinnamon, and coriander will still give it that authentic flavor, and the legumes provide heartiness.

Try adding diced vegetables like zucchini and carrots along with the lentils and chickpeas. A good vegetable broth will help retain the depth of flavor that makes harira so special.

Using a mix of lentils, chickpeas, and even tofu works well. The key is to sauté the onions, garlic, and spices first to build the base flavor before adding the broth and legumes.
