I love Moroccan pastilla but have recently gone gluten-free. Does anyone know how to make a gluten-free version of this dish?

You can use gluten-free phyllo dough or rice paper sheets to make pastilla. The filling stays the same with chicken, almonds, and spices, but the gluten-free dough will give you the crispy layers.
