I love Moroccan pastilla but have recently gone gluten-free. Does anyone know how to make a gluten-free version of this dish?

You can use gluten-free phyllo dough or rice paper sheets to make pastilla. The filling stays the same with chicken, almonds, and spices, but the gluten-free dough will give you the crispy layers.

Try using corn tortillas or gluten-free crepes in place of the traditional warqa dough. They crisp up nicely and hold the savory-sweet filling really well.

You can make your own gluten-free warqa dough using a blend of gluten-free flours like rice flour and tapioca starch. It takes a bit of practice, but the result is a delicious pastilla that’s safe for gluten-free diets.
