I love Moroccan tagine, but I’m trying to follow a vegetarian diet. What are some good substitutes for meat in these recipes that still keep the dish flavorful and satisfying?

You can replace meat with hearty vegetables like sweet potatoes, zucchini, and carrots. Add chickpeas for protein, and season the tagine with traditional spices like cumin, cinnamon, and paprika for a rich flavor.

Lentils are a great meat substitute for tagines. They hold up well during slow cooking and absorb the spices beautifully. You can also add olives and preserved lemons for extra depth.

Try adding tofu or tempeh to your tagine. Marinate them with Moroccan spices before cooking, and they’ll soak up all the flavors while providing a protein-rich alternative.

Eggplant is another great option. It has a meaty texture when cooked and pairs well with the flavors of a tagine. Pair it with tomatoes, bell peppers, and a generous amount of garlic.
