I’ve recently gone vegan and would love to know if there are any traditional Moroccan dishes that are naturally vegan or easy to adapt.

Zaalouk, the roasted eggplant and tomato salad, is naturally vegan and full of flavor. It’s a great side dish or dip with bread.

You can try making a vegetable tagine with carrots, zucchini, potatoes, and chickpeas. Just use olive oil and spices, and it’s a delicious vegan meal.

Lentil and chickpea harira is a traditional Moroccan soup that can be made vegan. It’s hearty and nutritious, with plenty of protein from the legumes.
