How do I make gluten-free Moroccan msemen?

I’ve recently gone gluten-free and miss having msemen (Moroccan flatbread). Does anyone have a gluten-free recipe that tastes like the real thing?

You can make gluten-free msemen using a blend of rice flour, tapioca starch, and a little xanthan gum. Roll the dough thin and cook as you would with regular msemen.
