I’m gluten intolerant, but I miss the texture and flavor of Moroccan bread. Are there any good gluten-free versions of traditional Moroccan bread?

You can try making gluten-free batbout using a mix of rice flour and tapioca flour. It has a similar texture to the original, and it’s perfect for dipping into tagines.

For gluten-free harcha, use a combination of almond flour and gluten-free semolina. It’s slightly different from the original, but still has that familiar crumbly texture.

I make a gluten-free khobz using sorghum flour, millet flour, and a bit of xanthan gum. It holds together well and has a nice, hearty flavor.
