I love the flavors of Moroccan tagines, but I’m vegetarian. Are there any good substitutes for lamb that still give a similar texture and richness?

For a hearty texture, you can use mushrooms and potatoes. They absorb the spices well and give a rich, earthy flavor.

Try using lentils as a base. They’re packed with protein and, when cooked with spices, create a filling and flavorful tagine.

Eggplant is a good substitute too! It softens nicely and pairs well with typical Moroccan spices like cumin, cinnamon, and paprika.

Chickpeas and carrots are great for adding both texture and flavor. You can also add dried apricots for a sweet touch similar to lamb tagine.
