I’ve heard that there’s a special pot used for making Moroccan couscous. Is it necessary, or can I make couscous with regular kitchen equipment?

A couscoussier, a double-tiered pot, is traditionally used for steaming couscous. However, you can use a regular pot with a steamer basket as an alternative.

You don’t need a couscoussier, but it helps with even steaming. You can still make couscous by steaming it in a metal colander placed over a pot of simmering water.

While a couscoussier is ideal, you can steam couscous in a regular pot using a mesh sieve. The key is to steam it multiple times, fluffing between stages.
