I want to make couscous the traditional way, but I’ve read that it requires special equipment. Do I need a special pot, and what does it do?

Yes, a couscoussier is traditionally used. It’s a two-tiered pot where the bottom part is for simmering broth or stew, and the top is for steaming the couscous.

You don’t necessarily need a couscoussier, but it helps to achieve the perfect texture. A regular steamer or colander over a pot will work as a substitute.

The couscoussier is designed for even steaming, which prevents the couscous from getting mushy. If you cook couscous often, it’s a worthwhile investment.
