I’ve tried maakouda at street food stalls in Morocco, and I want to recreate them at home. How do I make the perfect crispy potato fritters?

Boil and mash potatoes, then mix with garlic, parsley, and spices like cumin and paprika. Form into patties and fry until golden and crispy.

To make maakouda, mash boiled potatoes and mix them with egg, parsley, and cumin. Shape into small patties and fry in hot oil until crispy on the outside.

For perfect maakouda, use mashed potatoes seasoned with cumin and garlic. Shape into small fritters and fry them until golden brown and crisp.
