I tried maakouda from a street vendor in Morocco and loved it! Does anyone have a good recipe for these potato fritters?

To make maakouda, mash boiled potatoes, mix with garlic, parsley, cumin, and paprika, shape into patties, and fry them until golden. They’re crispy on the outside and soft inside.

Maakouda is easy to make. Just mash boiled potatoes, season with cumin, turmeric, and garlic, form into patties, and fry in hot oil until crispy.

Boil and mash potatoes, then mix in garlic, cumin, parsley, and a little flour. Shape into patties and fry in oil until crispy and golden. Serve hot with dipping sauce.
