I’ve been experimenting with zaalouk and decided to roast red peppers before adding them. The flavor is deeper and smokier. Have any of you tried variations of zaalouk?

That sounds delicious! I’ve tried adding smoked paprika and fresh parsley at the end for an extra kick, and it works really well.

I sometimes add a bit of crumbled feta on top when serving. The saltiness and creaminess go perfectly with the eggplant and tomatoes.

Another twist is to mix in roasted zucchini with the eggplant. It adds a subtle sweetness and more texture.

I’ve done a similar variation but with grilled tomatoes as well, which adds a rich, smoky flavor.
