I’m new to Moroccan cooking and looking for an easy side dish to serve with roasted lamb or chicken. Any suggestions?

Taktouka is a great option! It’s a cooked salad of tomatoes and green peppers seasoned with garlic, olive oil, and spices. It’s simple but flavorful.

Try carrot salad with cumin and orange. Slice the carrots thinly, then dress with olive oil, cumin, and a bit of orange juice. It’s refreshing and pairs well with rich meats.

Zaalouk, an eggplant and tomato dip, is also easy to make and very popular as a side dish with meats. Just roast the eggplants, then cook with tomatoes, garlic, and spices.

Simple steamed couscous with a drizzle of olive oil and a sprinkle of parsley is always a safe choice. It’s versatile and goes with just about any dish.
